Gluten is a very big natural polymer produced in wheat (Triticum aestivum L) grains. Its quality depends on high-molecular-weight (HMW) of glutenin subunits which belong to wheat prolamins. This paper reviews literature data on properties of gluten, understanding the control of HMW glutenin genes, structure of their products and producing of wheat transgenic lines.
