Asthma is a heterogeneous disease characterized by chronic airway inflammation. It is defined by the history of respiratory symptoms such as wheeze, shortness of breath, chest tightness and cough that vary over time and in intensity, together with variable expiratory airflow limitation. This disease is a serious global health problem, especial-ly in developed countries. There exist many hypotheses which try to explain reason of asthma development. Epidemiologic studies sug-gest associations between dietary antioxidants and lipids, especially vegetable oils, and parameters of asthma. It has been hypothesized that decreasing antioxidant and vitamin D deficiency, and an excess of polyunsaturated fatty acids (PUFA) n -6 to n-3 contributes to the development of asthma and severity of its symptoms. It seems that the behavior of a proper diet can reduce the frequency and severity of asthma symptoms.

Astma jest heterogenną chorobą, która charakteryzuje się przewlekłym zapaleniem dróg oddechowych i występowaniem takich objawów, jak świszczący oddech, duszność, uczucie ściskania w klatce piersiowej i kaszel, o zmiennej częstości i nasileniu. Zwiększona reaktywność dróg oddechowych prowadzi do utrudnionego i zmniejszonego przepływu powietrza przez drogi oddechowe. Ograniczenie to jest spowodowane przez skurcz mięśni gładkich i obrzęk błony śluzowej oskrzeli, tworzenie czopów śluzowych. Z czasem dochodzi do przebudowy ściany oskrzeli. Choroba ta stanowi poważny, globalny problem zdrowotny, szczególnie w krajach rozwiniętych. Istnieje wiele hipotez próbujących wyjaśnić przyczyny rozwoju astmy. Badania epidemiologiczne wska-zują na istnienie związku pomiędzy zawartością w diecie antyoksydantów, tłuszczy, szczególnie roślinnych oraz sztucznych dodatków do żywności, a wystąpieniem objawów choroby oraz częstotliwością i intensywnością zaostrzeń. Niewystarczająca ilość antyoksydantów, niedobór witaminy D oraz nadmiar wielonienasyconych kwasów tłuszczowych (PUFA) omega 6 w stosunku do omega 3 może przyczynić się do rozwoju astmy i nasilenia jej objawów. Wydaje się, że zachowanie odpowiedniej diety może zmniejszyć częstość i nasilenie objawów astmy.
